Best Chocolate Chip Banana Mickey Mouse Pancakes

And these must-make Mickey Mouse Chocolate Chip Banana Pancakes on the Valentine’s Day Menu…
As a kid, every year on Valentine’s, my mom would cook me chocolate chip pancakes.
And not just any chocolate chip pancakes, but Mickey Mouse chocolate chip pancakes.
She had this special touch in which she’d griddle up the flapjack with her Betty Crocker Bisquick (and chocolate chips of course), then add two small “ears” to each side in the perfect dimensions, stuck to Mickey’s head.
Every year on Valentine’s Day, I looked forward to my happy Mickey Mouse pancake, drizzled with a touch of Aunt Jemima syrup that smiled back at me on my plate, with a chocolate chip for each “eye.”
Mom would serve me the breakfast fit for a queen, and surprise me with a Valentine’s Day goodie (like a new pair of cute socks, Hershey’s Hugs & Kisses and a Beanie Baby).
What I really remember though?
Feeling on top of the world— like a million bucks.
I loved Valentine’s Day as much as I did Christmas or my birthday, and my mom’s Mickey Mouse pancakes every year reminded of just how loved and uniquely, wonderfully special I was.
To this day…Whenever I make pancakes, I can’t help but remember Mickey Mouse pancakes…And this weekend I decided to refurbish the oldie but goodie.
Try it for yourself:
Mickey Mouse Pancakes
Ingredients
- 1 Ripe Banana or 1/2 – 3/4 Ripe Plantain (large)
- 2 Tbsp. Creamy Almond Butter or Sunbutter
- 2 Pastured Eggs
- 1 tsp. Vanilla (optional)
- Cinnamon, to taste (optional)
- Enjoy Life Chocolate Chips (optional)
- 1 Tbsp. Coconut Oil (for cooking)
Directions
Mix all ingredients (except for coconut oil) together until a batter forms. Heat a skillet with coconut oil on medium-low heat and pour a round dollop of batter into the pan. Pan fry the ‘pancake’ then flip when lightly browned on one side. When you flip, add two more dollops for the ‘ears’ to cook with the ‘face.’ Cook like an omelet, lightly browned on both sides. Top with a fried egg, nitrate-free turkey bacon, a little extra nutbutter and/or a touch of pure maple syrup. Makes 2 servings
