In the spirit of Texas, breakfast tacos are on tap in my kitchen this week for some breakfasts.
Before I moved to Austin, I had never heard of a breakfast taco, but you can find them practically in any restaurant that serves breakfast here.
Like bagels and schmear in New York, Cuban coffee (café con leche) in Miami or or Chicago style pizza in Chicago, breakfast tacos are a staple in Austin.
You’ve got to try my homemade version with the one and only (best ever) tortillas (By Siete tortillas—a gluten free tortilla made from coconut flour, almond flour or chia seeds. You choose).
Breakfast Tacos
Ingredients
- 2 Siete Tortillas
- 3 Eggs
- 2 Slices Nitrate Free Bacon/Turkey Bacon
- Spinach
- Guacamole or Avocado
- Optional: Salsa
Directions:
- Scramble eggs with greens in 1 tsp ghee in pan over medium heat
- Fry bacon in separate pan
- Assemble in tortillas
- Top with guacamole and/or salsa
- Bon apetit
