I love the idea of meal prep and great tasting food. But, often times when I look inside a recipe book, I think: “Me? Never?” The food photos look far too pretty for me. And don’t even get me started with Instagram. Check out some of these beautiful, talented ladies’ creations to see what I mean: Fed & Fit Fit Brit Nutrition Rachael’s Good Eats Sigh…one day…probably won’t be me.
But what I am good at?
SIMPLE meals.
Like 5-10 minute meals. Looking for something quick, easy AND delicious?
Try one of my favorite “Anytime” Meals:
Cook time? Less than 10-minutes.
Begin with a healthy fat and heat up a generous amount in your skillet:
- Coconut oil
- Duck Fat
- Lard
- Tallow
- Ghee
Select a starchy vegetable and cook until just softened (around 15 minutes):
- Sweet potato (Japanese, Garnet, White, etc.)
- Yam
- Carrots
- Butternut Squash
- Plantains (fried in coconut oil)
- Spaghetti Squash
- Acorn Squash
Add some seasonings to the pan:
- Garlic
- Ginger
- Onions/onion powder
- Paprika
- Shallots
- Rosemary
- Thyme
- Sage
- Cinnamon
- Black pepper
- Sea salt
- Other Optional Add-ins: Coconut milk, Coconut Aminos, Bone Broth
Add one or two veggies to the pan and cook until almost completely soft:
- Broccoli
- Cauliflower
- Green beans
- Zucchini
- Mushrooms
In the last couple of minutes, add some greens:
- Kale
- Chard
- Spinach
- Collard greens
- Power greens, blend
Lastly, add some leftover cooked protein or scramble some eggs:
- Shredded chicken or duck
- Shredded or ground beef
- Salmon
- Bacon
- Pasture-raised eggs
Bone apetite.
You can really build any meal, simply with some meat, veggies and spices.
Here are 3 other simple meals you can whip up in no time when hunger strikes:
BLT Chicken Salad
Ingredients
- 1 cup pulled chicken (I use rotessirie)
- 1 tbsp. avocado oil mayo
- 2 tsp. Dijon mustard
- sea salt and pepper, to taste
- 2 slices nitrate-free bacon, chopped (optional)
- lettuce + diced cherry tomatoes
Directions:
- Mix all ingredients together
- Serve on top of greens, with some Simple Mills crackers or in coconut flour wrap
Stuffed Crockpot Sweet Potatoes
Ingredients
- 3-5 Medium Sweet Potatoes or Yams (I LOVE Japanese Sweet Potatoes)
- Foil
- Canned wild salmon (or other protein of choice: ground meat, pulled pork, pulled chicken, etc.)
- Leafy greens
Directions:
*Batch cook these and store in fridge for the week (so you have at all times)
- Wrap all the sweet potatoes or yams in foil
- Place in crockpot and cook on low for 8 hours or high for 4 hours.
- Add canned wild salmon, ground turkey or bison, or pulled pork or chicken.
- Add healthy fat like drizzled coconut oil, coconut butter, tahini or guacamole.
- Top with leafy greens.
- Really whatever you have in your kitchen at that time.
Tacos
Ingredients
For the meat
- 1 lb ground beef
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp oregano
- Sea salt + Pepper, to taste
For the extras
- 1 Head of Romaine lettuce
- 2 Roma tomatoes (thinly sliced)
- 1/4 Red onion (thinly sliced) (optional)
- 1/4 cup Black olives (sliced)
- 1 Avocado (pitted and diced)
- Grassfed, raw cheese (optional)
- 1 tbsp Cilantro (chopped)
Directions:
- Place the lettuce, tomatoes, onion, and olives into a large bowl and toss to combine. Set aside.
- Brown the ground beef in a large skillet over medium heat.
- Stir in all of the spices.
- Cook until the beef is no longer pink, stirring regularly.
- Serve in lettuce wraps with guacamole, tomatoes and olives on top.
